Spicy Fried Chicken


2-4 Boneless Skinless Chicken Breasts (can also used bone-in chicken pieces)
1 1/2 cups White Flour
1/4 teaspoonful Chili Flakes
1 Egg
1 cup of Milk
Salt
Pepper


Pour vegetable oil into a cast-iron or heavy skillet until it's about 1/2 to 1 inch deep. Heat on medium-high heat. Mix flour and chili flakes in bowl or dish. Mix egg and milk in another bowl or dish. Sprinkle chicken with salt and pepper then dip in milk/egg wash. Then coat in flour mix. Dip back into wash and again into flour mix. Place carefully in hot oil. Cook on both sides until done.

Chef's Note: You can omit the chili flakes if you don't want the spice/heat. You can also add more chili flakes for more added heat.

Baked Potato Casserole

2 1/2 lbs Golden Potatoes
1 small bottle Ranch Dressing
1 small container Sour Cream
1 bag Shredded Cheese
1 bottle Bacon Bits
1/2 cup Melted Butter
Coarse Salt
Pepper

Wash unpeeled potatoes, cube, and place in pot. Boil until almost tender. In large bowl, mix dressing, sour cream, 1/2 of cheese, and 1/2 of bacon bits. Place potatoes in casserole dish, sprinkle with salt and pepper, and then pour melted butter evenly over top. Next evenly pour mixture over the top and layer remainder of cheese and bacon bits. Bake in 350 degree oven for about 10-15 minutes or until cheese is melted. Enjoy!!

Sopapilla Cheesecake

So I was looking for a dessert type recipe for a family get-together tonight and came across one on allrecipes.com. It looked pretty good, but didn't have any idea how it would turn, but decided to try it anyways. Of course, I forgot to take a picture of it before it got cut into, and almost all gone, but I did get one afterwards. Hubby said it didn't look good, but he ate about 3 bowls full!! I have to admit, it's awesome! The person that came up with this recipe deserves BIG props!! I thought I would share it with you guys:


3 (8 ounce) packages softened cream cheese
1 1/2 cups white sugar
1 1/2 teaspoonfuls vanilla extract
2 cans crescent rolls (or recipe creations)

1/2 cup melted butter
1 teaspoonful cinnamon
1/2 cup white sugar
1 small package sliced almonds


Preheat oven 350 degrees.
Blend together cream cheese, sugar, and vanilla until smooth. Roll out 1 can of crescent rolls and place in bottom of 9x13 greased pan. Spread cream cheese mixture evenly over the top. Place second can of rolled out crescent rolls on top of dish. Drizzle melted butter evenly over top, then sprinkle with mixed together cinnamon and 1/2 cup white sugar. Top with sliced almonds and bake in preheated oven until top layer is puffy and golden brown, about 40-45 minutes. Enjoy!!!


Yields 12-18 squares

Semi-Homemade Vegetable Beef Soup


2 lbs Hamburger Meat
1 large can Veg-All
1 box Beef Broth
1 can extra vegetables {i.e potatos, corn, or green beans (optional)}
Salt
Pepper
Minced Onions
Worchestershire Sauce

Brown meat in saucepan or crockpot. Drain. Open and drain Veg-All and veggies. Mix in with meat. Add broth and season to liking with salt, pepper, minced onions, and Worchestersire Sauce. Bring to boil then turn down to simmer. Enjoy!!


Yields 10-12 servings

Breakfast Casserole

1-2 Packages Crescent Rolls
1 Lb Ground Sausage
4 Eggs
1/2 Cup Milk
1 Package Shredded Cheese (any flavor~Cheddar, Mozzarella, Parmesan)

Preheat oven to 350 degrees.
Lightly grease (or spray) glass cake dish. Brown sausage in a skillet. Open 1 package of rolls and divide into rectangles. Lay in bottom of pan. Spread browned sausage on top or rolls. Mix eggs and milk and pour over top of sausage. Layer with cheese. Open other package of rolls and place on top of everything (Optional). Bake in 350 degree oven until top layer of rolls are brown or cheese is melted, which ever is on top. Enjoy!

Cherry Cream Cheese Pie

1 Graham Cracker Crust
1 (8 oz) Package Cream Cheese
1 Can Condensed Milk
1/3 Cup Lemon Juice
1 Teaspoonful Vanilla Extract
1 Can Cherry (or any choice) of Pie Filling

Beat cream cheese and then add milk and beat until smooth. Add juice and vanilla. Mix well. Chill until firm than top with filling. Enjoy!

Chocolate Gravy

1/2 Cup Sugar
1/2 Teaspoonful Butter
3/4 Cups Milk
1 Tablespoonful Flour
1 1/2 Tablespoonful Cocoa Powder

Mix all dry ingredients in a heavy saucepan with a whisk. (A whisk blends ingredients better than a spoon.) Stir in milk. Cook over medium heat stirring constantly. Remove the pot when mixture has pudding like texture. Stir in butter until completely melted. Serve over biscuits. Enjoy!

Sugar Cookies

1 Cup Sugar
1 Cup Butter
3 Tablespoonful Milk
1 Teaspoonful Vanilla Extract
1 Egg
3 Cups Flour
1 1/2 Teaspoonful Baking Powder
1/2 Teaspoonful Salt

In large bowl, combine sugar, butter, milk, vanilla, and egg. Add flour, baking powder, and salt. Mix well. Cover with plastic wrap; refrigerate 1 hour. Heat oven to 400 degrees. On lightly floured surface, roll out 1/3 of dough at a time to 1/3 inch thickness. Keep remaining dough refrigerated. Cut with 2 inch cookie cutter. Place 1 inch apart on ungreased cookie sheet. Bake at 400 degrees for 5-9 minutes or until edges are light golden brown. Immediately remove from cookie sheet. Decorate as desired.

Cornbread


1 Cup Water
1 Cup Pancake Mix
1 Cup Cornmeal
1 Cup Eggs
1/4 Cup Sugar

Preheat oven to 350 degrees.
Mix all ingredients together. Pour into greased round pan or small cast-iron skillet and cook until golden brown and knife comes out clean.

Yields about 6 medium slices.

Sausage Balls

2 Lbs Sausage
1 1/2 Cups Baking/ Biscuit Mix
4 Cups Shredded Sharp Cheddar Cheese
1/2 Cup Finely Chopped Onion
1/2 Cup Finely Chopped Celery
1/2 Teaspoonful Garlic Powder

Preheat oven to 375 degrees.
Mix all ingredients. Form into 1 inch balls. Bake 15 minutes on ungreased cookie sheet until golden brown.

Peanut Butter Cup Cookies

Peanut Butter Cookie Dough
1 Bag Reese's Peanut Butter Cups

Roll dough into 1 inch balls. Place into greased mini muffin pans. Bake for 8 minutes exactly! Dough will not quite be done. Make indention into dough balls and place 1 unwrapped peanut butter cup into them. Freeze unwrapped cups while cookies are baking for easier handling. Let cool or eat right away. Either way, Enjoy!!

Peanut Butter Cookies

1/2 Cup Shortening
1/2 Cup Peanut Butter
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1 1/2 Cup Flour
1/2 Teaspoonful Baking Powder
3/4 Teaspoonful Baking Soda
1/4 Teaspoonful Salt

Preheat oven to 375 degrees.
Mix shortening, peanut butter, sugars, and eggs throughly. Measure flour by dipping method, blend dry ingredients, stir into shortening mixture. Bake 10-12 minutes or until done.

Meatloaf

1 1/2 Ground Beef
1/2 Teaspoonful Pepper
1/2 Teaspoonful Salt
2 Eggs
1/2 Tablespoon Chopped Onions or Green Peppers
2 Slices Bread Cubes
4 Oz Tomato Sauce
4 More Oz of Tomato Sauce

Preheat oven to 350 degrees.
Mix all together and place into greased loaf pan. Spread 4 more oz of tomato sauce on top of loaf. Bake until done. Let stand 10-15 minutes before serving.

Banana (Nut) Bread

1/3 Cup Shortening
1/2 Cup Sugar
2 Eggs
1 3/4 Cups Sifted Flour
1 Teaspoonful Baking Powder
1/2 Teaspoonful Baking Soda
1/2 Teaspoonful Salt
1 Cup Mashed Bananas
1 Cup Chopped Walnuts (Optional)

Preheat oven to 350 degrees.
Cream together shortening and sugar. Add eggs and beat well. Sift together dry ingredients. Add to creamed mixture alternating with bananas. Blending well after each addition. Pour into well greased 9 x 5 x 3 loaf pan. Bake for 45-50 minutes or until toothpick comes out clean. Remove from pan and cool on cooling rack. Enjoy!

Carrot Cake with Cream Cheese Frosting

Carrot Cake

3 Cups Grated Carrots
1/2 Teaspoonful Salt
2 Teaspoonful Baking Powder
3 Cups Sifted Flour
2 Teaspoonful Cinnamon
1 Cup Oil
4 Eggs
2 Teaspoonful Baking Soda
2 Cups Sugar

Preheat oven to 350 degrees. Grease and flour (or spray) bundt cake pan. Mix all ingredients together and pour into pan. Bake for 30-45 minutes or until toothpick comes out clean.

Cream Cheese Frosting

1 (3 oz) Package Cream Cheese
1 Teaspoonful Vanilla Extract
2 1/2 Cups Sifted Powdered Sugar
1 Tablespoonful Milk
Dash of Salt

Combine cream cheese and milk. Add sugar gradually blending throughly. Add vanilla and salt. Mix well.

Chocolate Chip Turtle Cookies

2 1/2 Cup Flour
1 Teaspoonful Baking Soda
1 Teaspoonful Salt

Combine in small bowl and set aside.

1 Cup Butter
3/4 Cup Sugar
3/4 Cup Firmly Packed Brown Sugar
1 Teaspoonful Vanilla Extract
2 Eggs
1 Package Chocolate Chip Cookies
1 Package Chopped Nuts
1 Package Caramels


Preheat oven to 350 degrees.
Unwrap caramels and cut into fourths. In large bowl, combine butter, sugars, and vanilla. Beat until creamy then add eggs. Gradually mix in flour mixture. Stir in chips, nuts, and fourth caramels. Drop onto un-greased cookie sheet. Bake for aproxamitly 8-10 minutes or until lightly browned. Remove and cool on cooling rack.

Yields 2 1/2 Dozens

No Bake Cookies (Chocolate Oatmeal Cookies)

2 Cups Sugar
1/2 Cup Milk
1/2 Cup Cocoa
1 Cube Butter (1/2 Cup)

Combine and boil hard for 1 minute.

Stir in:

1/2 Cup Peanut Butter
1 Teaspoonful Vanilla Extract
3 Cups Oatmeal

Drop on waxed paper by spoonfuls and let stand.

French Toast

1 Cup Milk
1 Egg
1 Teaspoonful Vanilla Extract
1 Tablespoon Cinnamon
Bread, either plain sliced bread or sliced french bread

Place about a teaspoonful of butter in skillet or on a griddle and heat until melted.
Mix milk, egg, vanilla, and cinnamon in a shallow dish or bowl. Dip bread in mixture until coated on both sides. Place soaked bread in hot skillet or griddle and brown, then flip and cook until brown on both sides. Then remove. Serve with butter and syrup. Also can sprinkle powdered sugar on top before syrup. Enjoy!

Deviled Egg Sandwiches

3-4 Hard boiled Eggs
3-4 Teaspoonsful Mayo
1-4 Teaspoonful Yellow Mustard
Paprika
Salt
Pepper

Peel and slice hard boiled eggs into medium bowl. Combine mayo, mustard, dash of salt, dash of pepper, and sprinkle of paprika into eggs. Serve on lightly toasted bread. Enjoy!

Steak and Potato Grill Mix

3-4 Potatoes
1 1-2 lb Thin-cut Top Sirloin Steak
1/2 Onion
1 Green Bell Pepper
5-10 Grape Tomatoes
Worcestershire Sauce
Salt
Pepper
Extra Virgin Olive Oil

Wash unpeeled potatoes thoroughly. Slice ends off and discard. Cut down middle of potatoes lengthwise, then slice. Place in large bowl, sprinkle with salt, pepper, and a drizzle of EVOO and set aside. Peel onion and slice into strips. Place in medium size bowl. Wash pepper and cut into strips. Place in bowl with onions strips. Toss with a sprinkle of salt and pepper and a teaspoonful of Worcestershire sauce. Place a sheet of aluminum foil about 1ft long on counter. Place spoonful of potatoes on it, a few slices of onion and peppers, and place a tomato or two on top. Pull up sides of foil, leaving a small opening for air and steam to escape. Place in 400 degree preheated oven for 30-45 minutes or until potatoes are tender.

Cube steak into 1 inch cubes, place in small bowl. Stir in a dash of salt and pepper and a tablespoon of Worteshire sauce. Pour in 8x8 glass dish. Pour remainder of peppers and onions in dish. Place handful of tomatoes in dish. Place in oven and cook until meat is brown, about 20 minutes or so.

Serve with rolls and Enjoy!!

Beef Patties on Rice

2-3 servings Rice
4 Cubed Beef Patties
1 can Cream of Mushroom Soup

Fry beef patties in pan until done. Make rice according to directions on box. Spread cooked rice in bottom of glass dish. Place cooked cubed beef patties on top and pour cream of mushroom soup over. Bake in oven at 350 degrees for about 10-15 minutes or until soup is done cooking. You can also make the soup prior to pouring over rice and patties and just heat for about 5 minutes in oven.

Cinnamon Pinwheels

My mom has made these every since I was little. She would make them out of the scraps of dough left over from making a pie or turnovers. I loved (still do) more than the pie or turnovers themselves!
Preheat oven 350 degrees.
Roll out dough, you can use homemade dough mixture or the refrigerated kind. Spread butter on rolled out dough. Sprinkle generously with cinnamon and sugar. Roll up dough. Cut ends off, then slice roll into about 1/2 inch sections. Place on greased cookie sheet. You can place them with bottoms down, or place them on their sides and kinda smash down. Sprinkle with sugar and place in oven. Bake for about 15 minutes or until golden brown. Place on cooling rack. Enjoy!!

Beef Enchiladas

1 lb Ground Beef
1 Packet Enchilada Seasoning
1 Package Tortilla Shells
1 Large Can Enchilada Sauce
1 Package Shredded Cheese

Toppings: Sour Cream, Shredded Lettuce, etc...

Brown ground beef in skillet until done. Drain meat then mix and cook with enchilada seasoning according to packet instructions. Divide seasoned meat into tortilla shells, roll and place into a casserole dish. Pour can, or as much as you would like, of enchilada sauce on top of full dish. Then cover with cheese. Bake on 350 degrees until cheese is completely melted. Serve with choice of toppings and Enjoy!

Bar-B-Que Chicken Sandwiches

3-4 Chicken Breasts
1 Bottle Bar-B-Que Sauce (your choice of flavoring)
Hamburger Buns

Boil chicken breasts until done. Drain then shred chicken and mix with Bar-B-Que sauce. Place on buns and Enjoy!!

Chicken Dorito Casserole

(So I ran out of shredded cheese and velveeta cheese, so I had to combine them. Yes it looks weird, but still tasted great!!!)

4-6 Chicken Breasts
1 Bag of Doritos
1 Can of Cream of Mushroom Soup
1 Can of Cream of Chicken Soup
1 Can of Rotel
1 Bag of Shredded Cheese (you can also use Velveeta sliced and place on top)

Boil chicken breasts. Smash Doritos into small pieces and pour into bottom of casserole dish. Preheat oven 400 degrees. When chicken is done, drain and shred into small pieces. Pour shredded chicken over top of smashed Doritos. Mix Cream of Mushroom, Cream of Chicken, and Rotel in bowl. Pour over top of chicken. Spread shredded cheese over top. Place in oven and bake for 30-40 minutes. Enjoy!

Chicken Ramen Noodles

This is a twist to the ordinary Smack Ramen meal.

1-2 Chicken Breasts
1 Package Chicken Smack Ramen

Fry or grill chicken breasts until done. Make Smack Ramen according to package directions.
Cube chicken breast then toss into Smack Ramen. Enjoy


You could also substitute the chicken with beef strips or shrimp depending on what type of Smack Ramen you use.
